While soy lecithin derived from soy oil sludge is not necessarily a problem, it is what this waste product contains that gives most reason for concern. The extraction of the soy oil from the bean requires the use of toxic solvents like hexane similar to the
chemical sprays used to extract every drop of orange juice from conventional oranges. In addition, commercial soy these days is almost always genetically modified meaning pesticide residue galore.  Adding insult to injury, the soy lecithin which no doubt contains toxic solvent & pesticide residues is bleached to transform the color from a dirty brownish hue to a light yellow.  While the manufacturing process of soy lecithin theoretically removes all soy proteins leaving a product that is hypoallergenic, the reality is something else. 
Even tiny amounts of soy protein residue in soy lecithin are a danger to those with soy allergies.

Pillows:

Flame Retardants – 1 material that is frequently found in most foam pillows is polyurethane, a flame retardant and toxic chemical that can irritate your skin. According to the Environmental Working Group, other flame retardants, such as plybrominated-diphenyl-ethers (PBDEs) are likely to leach out of foam & fabric materials and harm you & your environment. 

Fungi – According to a 2005 study that was conducted in England, several samples from a variety of pillows were taken & confirmed to have traces of Aspergillus fumigates fungi. These fungi are associated with worsening allergies, severe asthma, chronic sinusitis & poor overall immune health.

Drug resistance – 

Not only do you have to worry about your pillow being a potential breeding ground for harmful fungi, but certain strains of fungi, such as Aspergillus fumigates have been known to develop drug resistance, which makes them difficult to eliminate.

Formaldehyde – 

It is well known that foam, like the kind found in most regular pillows, releases formaldehyde gas, which has been found to be a harmful carcinogen to humans. 

Down - For many years, people have known pet dander to contribute to allergic reactions, as well as issues with the ear, nose, throat & lungs. If dander accumulates on your pillows, it can serve as the perfect breeding ground for dust mites, fungi & bacteria. 

(For existing pillows, perhaps monthly, put pillows outdoors in noonday sun &/or highest heat for at least 1 hour.)

The 3rd way GMOs can cause harm stems from the fact that transgenic protein may be different from the original & create unintended health hazards. In order for the inserted gene to produce proteins, the piece of DNA is 1st 'transcribed' into RNA, & then “translated” to produce amino acid sequences, which are only then folded into proteins. These proteins confer the desired traits in the GMOs. The insertion process, however, can cause mutations & truncations in the genetic code of the inserted transgene. Monsanto’s Mon 810 Bt corn, for example, lost 30% the transgene during insertion, & another of their Bt corns (Mon 863) ended up a mutation within the transgene. If the original transgene sequences are changed, then the amino acid sequences of proteins they produce in GMOs can similarly be altered, with unpredictable side-effects.
Even if the trans-gene gets into the plant DNA unscathed, the
transcription process from DNA to RNA may also introduce unpredicted changes. Monsanto’s Roundup Ready soybean, for example, does not produce the RNA that Monsanto engineers intended. Instead, because a portion of the genetic sequence they inserted into the plant’s DNA (the 'termination' sequence) failed to function properly, the soybean actually produces four RNA transcripts.27  These can produce proteins of different shapes & sequences.
Even if the RNA functions fine & produces the amino acids in the desired sequence, they may be misfolded; or molecules may attach themselves to the folded protein causing dangerous side-effects. For example, when Australian scientists inserted a gene from kidney beans into peas, the protein produced in a
genetically engineered pea had the right amino acid sequence, the same as that produced in kidney beans. But the sugar molecules attached to the protein in the peas had a slightly different shape from the molecules that attached themselves in the natural beans. This slight change of the sugar chain (called glycosylation) was credited with changing a harmless protein into a potentially deadly allergen.28"
